Hand-Cut Ice Program
Water is the single most overlooked ingredient in a cocktail. Standard ice machine cubes contain oxygen bubbles and impurities, causing them to melt rapidly and over-dilute drinks.
At "The Emerald", we harvest clear ice blocks from purified water reservoirs over 72 hours. We then carve these blocks by hand into exact geometric cubes. Free of oxygen and mineral haze, our clear ice melts at a fraction of the speed, keeping your negroni cold and balanced without water logs.

Every glass is kept at sub-zero temperatures inside our trailer chests, ensuring temperature stabilization prior to mixing.
House-Cooked Modifiers
We simmer seasonal simple syrups with fresh rosemary, chamomile, or flamed orange rinds to infuse natural oils directly into the cocktail base.
Double Strained Pours
All shaken cocktails are poured through extra fine mesh strainers to catch ice slivers and herb particles, creating a silky mouthfeel.
